Dinner Last NightL Lemon Tarragon Salmon over Asparagus

Dinner last night was lemon tarragon salmon over asparagus. The secret of the dish is wrapping the entire thing in parchment paper. Salmon over fresh asparagus spears topped with a concoction red onions, fresh tarragon, lemon zest and juice, salt, and pepper...wrap it in parchment, bake, and voila - dinner! The salmon was really brightened up by the lemon and just tasted fresh and healthy (in a good way).

This looks great! The secret to any good fish is to wrap in parchment paper...my husband taught me this when he made me a good halibut for dinner one night. So fresh and healthy!

mmmmm, so good. The only fish I can get my husband to eat is salmon so this just might be on the menu this week! So healthy and exciting to eat!
